Additionally, the air extraction and renewal system creates a depression in the baking chamber, allowing all steam to be evacuated at the end of the baking cycle. The resulting dry atmosphere produces extra crispness in bread crusts.
Another advantage: heat and humidity do not spread throughout the bakehouse. When the oven door is opened, air from the bakehouse enters the oven, not the other way around.
